What happened

Founded in 2013 in Gilbert, Arizona, by Tony and Roushan Christofellis, Salad and Go expanded rapidly across the Southwest. By the end of 2024, the company had grown to 146 locations and attracted major investor interest.

But the same rapid growth that fueled its rise also created serious pressure. Rising costs, operational complexity, aggressive expansion, and strategic disagreements eventually pushed the company into decline.

In August 2026, Salad and Go filed for bankruptcy and closed its remaining restaurants.

In this Monterra Originals documentary, we explore how Salad and Go grew from a single Arizona restaurant into a billion-dollar fast-food story — and how that growth ultimately became unsustainable.
